Cassia Gum

Cassia gum is a polysaccharide containing about 75% mannose and side galactose units. This polysaccharide is available under various names in different countries around the world, including guar gum, xanthan gum, and cassia gum. The high galactose side chain concentration in cassia gum interferes with the gelling effect of anionic polymers.
